Ingredients

Salad Base[cite: 1]

  • 2/3 cup Mayonnaise, sour cream, or Greek yogurt[cite: 1] See notes below for dairy alternatives[cite: 1]
  • 2 tbsp Fresh chopped parsley[cite: 1] Adds a bright herbal flavor[cite: 1]
  • 1/2 tsp Kosher salt[cite: 1] Use more or less depending on chicken saltiness[cite: 1]
  • 1/4 tsp Black pepper[cite: 1] Plus a little more if needed for taste[cite: 1]

Mix-ins[cite: 1]

  • 2 cups Cooked shredded chicken[cite: 1] Rotisserie style works perfectly here[cite: 1]
  • 1/4 cup Finely diced red onion[cite: 1] Provides a sharp, crisp bite[cite: 1]
  • 1/2 cup Red grapes[cite: 1] Halved, or quartered depending on size[cite: 1]
  • 1/2 cup Finely diced celery[cite: 1] About 1 large or 2 small ribs[cite: 1]
  • 1/4 cup Chopped walnuts or pecans[cite: 1] Gives the salad essential texture and crunch[cite: 1]

Instructions

  • Do not chop your meat into little cubes. You need to shred it. Grab two sturdy dinner forks. Pull the chicken apart.[cite: 1]
  • Start with your base. Grab a large mixing bowl. Add your mayo, sour cream, or yogurt. Toss in the chopped parsley. Add your salt and pepper. Whisk it all up. Keep going until it is perfectly smooth.[cite: 1]
  • Next, drop the shredded chicken into the bowl. Fold it gently with a big spatula. Make sure every single strand is coated in the sauce.[cite: 1]
  • Drop in your fresh red grapes. Add the diced celery and red onions. Sprinkle your walnuts on top.[cite: 1]
  • Fold everything together very gently. We want to keep the grapes intact. Smashing them will make your salad watery. Use slow, sweeping motions from the bottom of the bowl up. Stop mixing as soon as everything looks even.[cite: 1]
  • Let the mixture rest in the fridge. Give it at least thirty minutes before eating. The resting period allows flavors to marry beautifully.[cite: 1]

Notes

Do you want to avoid mayo? Use full-fat Greek yogurt instead. Swap the walnuts for roasted sunflower seeds or pumpkin seeds for a nut-free option. Diced crisp apples or dried cranberries work perfectly as fruit substitutes. Keep your leftovers in an airtight container in the fridge for about three days.[cite: 1]
