Ingredients
  

  • Main Mixture:
  • White chocolate chips – 11 oz about 1½ cups, high-quality preferred
  • Light corn syrup – ¾ cup
  • Butter – 3 tablespoons unsalted
  • Miniature marshmallows – 1½ cups
  • Salt – pinch
  • Strawberry Cheerios – 6 cups
  • Freeze-dried strawberries – 1 cup roughly chopped (reserve ¼ cup finely chopped for topping)
  • Topping:
  • White chocolate chips for drizzle – 1 cup
  • Reserved freeze-dried strawberries – ¼ cup finely chopped

Instructions
 

  • Prepare Pan:
  • Line a 9x13-inch baking pan with parchment paper. Lightly grease with butter for easy removal.
  • Melt Base Mixture:
  • In a large microwave-safe bowl, combine 1½ cups white chocolate chips, corn syrup, and butter. Microwave in 30-second intervals, stirring between each, until melted (about 90 seconds total). Do not overheat.
  • Add Marshmallows & Salt:
  • Stir in miniature marshmallows and a pinch of salt. The mixture’s residual heat will partially melt the marshmallows, creating a smooth base.
  • Fold in Dry Ingredients:
  • Quickly mix in Strawberry Cheerios and chopped freeze-dried strawberries. Work fast, as the mixture firms up quickly.
  • Press into Pan:
  • Transfer the mixture to the prepared pan. Press down firmly and evenly with clean hands or a spatula to form a flat surface.
  • Drizzle & Top:
  • Melt remaining 1 cup white chocolate chips in the microwave. Drizzle over bars using a spoon or squeeze bottle. Immediately sprinkle reserved finely chopped strawberries on top.
  • Chill & Slice:
  • Refrigerate for at least 30 minutes until set. Cut into 16 squares using a sharp knife. Wipe the blade between cuts for clean edges.

Freeze-Dried Fruit: Avoid using fresh strawberries, which add moisture and make bars soggy.
