Ingredients
  

Chicken and Marinade

  • 1 pound chicken breast cut into uniform, bite-sized pieces
  • 1 tbsp avocado or coconut oil for cooking
  • 1/4 cup lime juice freshly squeezed
  • 1/4 cup orange juice adds natural sweetness
  • 1/2 tsp chipotle powder adjust for spice
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 2 tsp salt kosher salt preferred
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 2 tbsp honey

Spicy Lime Tahini Dressing

  • 1/2 cup tahini stir well
  • 3 peppers chipotle peppers in adobo finely chopped or blended
  • 2 cloves garlic fresh and peeled
  • 1/4 cup green onion roughly chopped
  • 1/4 cup cilantro stems included
  • 1/4 cup olive oil extra virgin
  • 1/4 cup water to thin consistency
  • 1/4 cup lime juice freshly squeezed

Bowl Assembly

  • cooked rice or quinoa
  • romaine lettuce chopped
  • 1 cup cherry or roma tomatoes diced
  • 1 cup carrots shredded
  • 1-2 avocado sliced
  • pickled onions

Instructions
 

  • In a medium bowl, whisk together lime juice, orange juice, spices, salt, garlic/onion powder, and honey. Add chicken, toss to coat, and refrigerate for at least 30 minutes (or overnight).
  • Place tahini, chipotle peppers, garlic, green onions, cilantro, olive oil, salt, water, and lime juice in a blender. Blend until smooth. Add water by the tablespoon if needed to reach a pourable consistency.
  • Heat oil in a large skillet over medium-high heat. Sear chicken pieces for 3-4 minutes undisturbed to develop a crust. Flip and cook for another 3 minutes until caramelized and cooked through. Let rest for a few minutes.
  • Layer bowls with a base of rice or quinoa and romaine lettuce. Top with cooked chicken, carrots, tomatoes, avocado, and pickled onions. Drizzle generously with the tahini dressing and garnish with cilantro.

Notes

If the dressing thickens in the fridge, let it sit at room temperature for 5 minutes or whisk in a splash of warm water. Chicken thighs can be used instead of breasts for even juicier results.
