Ingredients

Dry Mix

  • 5 cups rolled oats Use old-fashioned, not instant
  • 2 cups unsweetened shredded coconut Ensure it is unsweetened
  • 2 cups sliced almonds Raw or lightly toasted
  • 1/2 cup flax seed Whole or ground works
  • 1 cup date pellets Prevents clumping in the mix
  • 1/2 cup chia seeds Helps thicken the mixture
  • 1 cup golden or brown raisins Plumps up nicely when soaked

For 1 Serving

  • 1/2 cup muesli mix Measured from your prepared batch
  • 1/2 cup milk of choice Almond or cashew milk preferred
  • 1/2 grated apple Grate just before serving
  • 1/4 cup plain yogurt Adds creaminess and tang
  • fresh fruit As desired. Berries or bananas work well

Instructions

  • Pour your rolled oats into a very large mixing bowl. Toss in the unsweetened shredded coconut and sliced almonds.
  • Sprinkle in the flax seeds and the chia seeds. Add the golden or brown raisins and the date pellets.
  • Give everything a really thorough stir. Make sure the seeds are evenly distributed.
  • Transfer this to a large, airtight container like a big glass jar. Store it at room temperature in your pantry.
  • To prepare a single serving, scoop half a cup of your dry mixture into a serving bowl or a jar.
  • Pour half a cup of your favorite milk over it. Add one quarter cup of plain yogurt and grate half an apple directly into the bowl.
  • Stir everything together until well combined. Let the bowl sit for 15 minutes for a quick breakfast, or stash it in the fridge overnight for the creamiest possible results.

Notes

Always grate the apple right before you eat to keep the flavor bright and sweet. You can substitute the sliced almonds with chopped pecans or walnuts if you prefer.
