For Loose Granola:
Preheat oven to 300°F (150°C). Mix dry ingredients (excluding fruit). Combine wet ingredients, then stir into the dry mix.
Spread on a tray and bake for 35-40 minutes, tossing twice. Stir in dried fruit after baking.
For Clumpy Granola:
Preheat oven to 280°F (140°C). Whisk egg whites until foamy.
Mix all wet and dry ingredients (including fruit) in a bowl, then fold in the egg whites.
Spread on a tray in a doughnut shape (with a hole in the center). Bake undisturbed for 45 minutes.
Turn oven off, leave door slightly ajar, and let cool completely in the oven to set the clusters.
Notes
Use rolled oats for best texture. For clumpy granola, do not stir during baking.
