Ingredients
  

Dumpling Dough

  • 2 cups all-purpose flour measure by spooning and leveling
  • 1 tbsp baking powder ensure it is fresh
  • 1/2 tsp salt fine sea salt or table salt
  • 3 tbsp butter cut into small pieces
  • 1 cup milk whole milk preferred

Instructions
 

  • Grab a large, clean mixing bowl. Add the all-purpose flour, baking powder, and salt. Blend these dry ingredients thoroughly with a wire whisk.
  • Place a small saucepan over medium heat. Pour in the milk and add the butter. Watch closely for a gentle simmer. Once the butter melts completely, remove from heat. Do not let it boil.
  • Carefully pour the hot milk mixture into your dry ingredients. Stir gently until the wet and dry parts just begin to combine.
  • Drop the spoon and use your clean hands. Knead the dough very gently in the bowl two to three times until it forms a slightly shaggy, sticky ball. Do not overwork it.
  • Divide the dough into 16 small portions. Gently roll each piece into a rough ball.
  • Ensure your soup or broth is simmering gently on the stove. Lay the dough balls onto the hot liquid. Space them out slightly.
  • Cover the pot immediately with a heavy lid and simmer for exactly 10 minutes. Do not peek inside while they cook!
  • Carefully remove the lid and serve the puffed-up dumplings immediately in shallow bowls.

Notes

For even lighter results, try sifting your dry ingredients first. Be sure to keep the pot at a gentle simmer; a rapid, violent boil will cause the dumplings to break apart in the broth.
