Ingredients
  

Chicken Cordon Bleu Casserole

  • 2 cups egg noodles cooked al dente and well drained
  • 2 cups cooked chicken chopped into bite-sized pieces
  • 8 ounces turkey ham cooked and diced
  • 2 10.5-ounce cans cream of chicken soup Pacific Foods recommended
  • 2 cups Swiss cheese freshly shredded
  • kosher salt to taste
  • freshly cracked black pepper to taste
  • dried parsley to taste
  • 18 Ritz butter crackers crushed into coarse crumbs

Instructions
 

  • Preheat the oven to 400°F. Grease a 9x13-inch casserole dish with butter or cooking spray.
  • Add the cooked, well-drained egg noodles, chopped chicken, and diced turkey ham to a large mixing bowl.
  • Add the cream of chicken soup, freshly shredded Swiss cheese, salt, black pepper, and dried parsley. Gently fold until everything is evenly coated.
  • Transfer the mixture to the prepared casserole dish and spread it evenly into all four corners.
  • Crush the Ritz crackers into coarse pieces and sprinkle them evenly over the top of the casserole. Do not mix the crackers into the casserole.
  • Bake uncovered on the middle rack for 25 minutes, until the edges are hot and bubbly and the cracker topping is deep golden brown.
  • Remove from the oven and let the casserole rest for 5 to 10 minutes before serving.

Notes

For the creamiest result, hand-grate a block of Swiss cheese instead of using pre-shredded cheese. The casserole can be assembled a day ahead and refrigerated. For freezing, assemble without the cracker topping and add fresh crumbs before baking.
