Ingredients
  

  • ½ cup brown sugar packed
  • teaspoons ground cinnamon
  • 2 large eggs room temperature
  • ½ cup granulated sugar
  • ½ cup butter melted and slightly cooled
  • 1 teaspoon vanilla extract
  • cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 cups chopped apples Pink Lady, Gala, or Honeycrisp, peeled and chopped

Instructions
 

  • Preheat oven to 350°F. Grease an 8x5-inch loaf pan and line with parchment paper.
  • In a small bowl, whisk together brown sugar and cinnamon. Set aside.
  • In a large mixing bowl, whisk eggs and granulated sugar until well combined and slightly lightened.
  • Stir in melted butter and vanilla extract until smooth.
  • Add flour, baking powder, baking soda, and salt. Mix until just combined - batter will be thick.
  • Gently fold in chopped apples using a wooden spoon or spatula.
  • Pour half the batter into prepared pan. Sprinkle ¾ of cinnamon-sugar mixture over batter.
  • Spread remaining batter on top. Sprinkle remaining cinnamon sugar over surface.
  • Using a knife, gently swirl cinnamon mixture into top layer to create marble pattern.
  • Bake 35-45 minutes until golden brown and toothpick comes out clean or with few moist crumbs.
  • Cool in pan 10 minutes, then transfer to wire rack. Cool completely before slicing.

Notes

Use room temperature eggs for better mixing
Don't overmix batter to avoid tough texture
If top browns too quickly, tent with foil during last 15 minutes
Store in airtight container at room temperature up to 4 days
Can substitute butter with melted coconut oil for dairy-free version
Add ½ cup chopped walnuts or pecans for extra crunch
