Ingredients
  

  • 1 cup cottage cheese small curd works best
  • 4 large eggs room temperature
  • 1 cup rolled oats can substitute with quick oats

Instructions
 

  • In a blender, combine the cottage cheese, eggs, and rolled oats and blend until smooth.
  • Add oil to a non-stick pan over medium-low heat.
  • Once hot, add 1/4 cup portions of the pancake batter and cover the pan immediately.
  • Cook for 2-3 minutes until the edges are firm, then flip and cook for another two minutes until golden brown.
  • Remove from heat and repeat until all batter is used.

Notes

Patience is key! Keep the heat on medium-low to ensure the center cooks through without burning the outside. Covering the pan is essential for a fluffy middle. Serve with maple syrup, fresh berries, or even a fried egg for a savory twist.
